'sinful' yet yummy Ayam Kalasan

hola... how's weekend, everyone? hope u guys have a great weekend ya... last Sat. Mama Rose managed to bake Tiramisu Roulade, recipe referred from Women's Weekly cookbook.
With God's will, I hope I can share most recipes that have been on my stove, in my oven or simply from my humble kitchen. :) However, today's recipe is one of those popular Indonesian fried chicken, Ayam Kalasan. The reason I categorised that as'sinful' simply bcos the coconut ingredient. The ingredient is easily available in the supermarket. The setback is the time taken in preparation. We will know what I mean as we go about with the recipe. Without further ado, here's for you.

Ayam Goreng Kalasan ( Kalasan Fried Chicken)

Ingredient:
500ml coconut cream (santan) - I used 200mml KARA coconut cream w/ 300ml water
1 whole chicken cut into 8 parts - I used 8 chicken drumstick
1 tbsp sweet soya sauce (kicap manis)
1 tsp tumeric powder (serbuk kunyit)
Salt and sugar (garam dan gula) - to your own liking
Oil for frying

Paste Ingredient
*all to be finely blended
6cm galangal (lengkuas)
5cm ginger (halia / jahe)
4cm tumeric - I used abt 1 tsp tumeric powder)
5 cloves garlic (bawang putih)
5 sticks lemongrass (serai)
2 red onion (bawang besar)

Method:
1. Marinate the chicken together with sweet soya sauce, tumeric powder & salt for about 1 hour.
2. Boil the marinated chicken with coconut cream along with paste.
3. Add sugar and salt to taste.

4. Once the chickens is half cook, transfer the chicken to a sieve (tapisan/saringan).
5. Also sieve (tapis/saring) the boiled paste (bahan rebusan) and set aside.
6. Heat the oil and fry the chicken till golden brown.
7. Fry the sieved boiled blended ingredient (bahan rebusan) till crispy and tossed.

8. Place your fried chicken in a serving plate and spread the crispy paste. and Voila!!
